This product is from 10-day dry-aged lamb. It arrives frozen.
Our lamb mince is made from shoulder and leg cuts of rare-breed Shetland cross sheep. Raised on organic, biodynamically managed pastures, our sheep are 100% grass-fed and slow-grown, allowing the meat to develop naturally. Farmer Hannah manages the land with a regenerative approach, supporting soil health, biodiversity, and animal welfare. The animals are never given routine medications or vaccines, resulting in clean, trustworthy meat produced with minimal intervention.
Shetland sheep, like other primitive breeds, naturally deposit most of their fat around the organs rather than within the muscle. This produces noticeably leaner mince compared to modern commercial breeds, without compromising on flavour.
The result is a finely textured mince with a mild, subtly sweet taste and a clean finish—free from the strong “lamby” aroma often associated with grain-fed meat. Its natural depth of flavour means it shines in simple dishes, requiring little more than good seasoning to create a nourishing meal.

The cut-off time for the same week deliveries is:
- APC: Wednesday 12pm.
- FedEx: Tuesday 7pm (as collections are 9am Wednesday from us)
Orders received from Thursday to Sunday will be delivered the following week.

Our meat is clean and beyond organic
Our meat is not all labelled organic but it conforms to all the standards and goes well beyond them.
All our cattle and sheep are fed only grass. Grass that is never fertilized or sprayed with herbicides. Even an organic system does not require 100% grass fed system. The beef you get in the shop has been fed a mountain of grain which has been grown with pesticides and fertrilizers.
Our beef and lamb are good for the planet
The herd of grazing animals stimulates grassland to pump CO2 from the air into the soil. Yes, I mean CO2, the greenhouse gas that causes global warming. They do this by intensive grazing for 1 day only and allowing land to recover. After being grazed and re-growing, grassland pumps CO2 into the soil and stores it there as soil carbon while growing taller each time.
One person emits 10 tonnes of CO2 every year. This nearly equals what one of our cows takes from the air and stores in the soil (9.6 tonnes CO2) every year. This is a net CO2 after we have taken away corresponding methane emissions of our herd.
